Hey, I'm a cook, so style points aren't a priority for me. But, if form follows function, and the result is a perfect tool, then yes, we have style liftoff! By the way, these rating categories seem to be better suited to shoes or clothing. For cookware, there is a need for a "Functionality" category or similar quantified rating. Enough of that. At this moment, I am soaking some dried black beans in the pan. Usually, I would soak them in hot water off the heat; with the All-Clad pan, I can ratchet the heat down low enough to create a soaking medium for the beans. Usually this takes 20-30 minutes depending on how old the bean. When the beans have absorbed enough water, I simply turn up the heat and begin the cooking phase. During cooking, I don't have to check the beans too often; just bring them to a boil and reduce the heat to simmer. With this equipment, cooking is achieved at a low flame point on the gas stove, which means there is no need to stir the beans more than once or twice tops, to prevent sticking. Getting technical a little: due to way the metals are layered in the pan, there is, with All-Clad, the advantage of heat being distributed evenly, not only on the bottom, but up the sides of the pan as well. This increases the cooking area of the pan, and allows for extremely even heating. Whaddaya want already?
